Easiest Banana Nut Bread
If you know me, you know I LOVE to bake. But, the recipe must be easy, I don't like multiple steps or ingredients. I made this banana bread yesterday on a whim because I had 4 brown bananas that were headed to the trash but I desperately didn't' want to waste. The bread turned out PERFECT, and even my husband went nuts over it, and he isn't' really into baked goods (don't even get me started, I just don't understand how anyone could NOT love baked goods).
I shared this recipe over on my Facebook page but I thought I’d write it up in a blog post for future reference as well! It was so easy, so if you have any pancake mix and brown bananas lying around, get ready for the best banana bread of your life!
After having one slice, I realized they were just too huge, so I cut them in half. So perfect and delicious! I hope you enjoy!
Paleo Pizookie!
I have been loving making Danielle Walker's Real Deal Chocolate Chip Cookies as a way to still enjoy treats in my gluten free lifestyle. But lately, my baking sheets have been burning the bottoms of every cookie I bake! I finally got an AirBake pan today which I have heard amazing things about so I can't wait to use it! But yesterday, I was craving the cookies before I had the magic cookie sheet, so I decided to tweak the recipe a bit and make the cookies into more of "cookie bars." They taste just like a pizookie when you add ice cream on top and are absolutely delicious!! Here's the recipe!
Copycat Panera Apple Cinnamon Muffins
If you know me, you know I LOVE Panera. Mostly because of their baked goods. One of my favorite items that they have is their Apple Crunch muffin. It's so delicious and fluffy and tastes like apple pie in a muffin form. I wanted to recreate the recipe in a healthier, gluten-free way, and I think this recipe is SPOT ON to how these muffins taste! My husband tried one this morning and immediately said that I have to blog this recipe because they are THAT good. So here we go!
Banana Chocolate Chip Bread
I have been craving baked goods lately, like WHOA. I'm 37 weeks pregnant today and until now sweets weren't really my thing (except for a small bout with brownies in my second trimester). But lately, I've been all about the sweets. I really like baking my own treats and sweets because it's fun for me and I get to control what goes in them. So I decided to whip up some banana chocolate chip bread over the weekend, and it turned out delicious! Super easy ingredients and ready in under an hour!
Enjoy on its own or smeared with some peanut butter! So delicious!
Chocolate Chip Oat Bars!
I'm I have been craving chocolate and baked goods like no other. But I don't want to give in to all the cravings since I know how terrible commercially sold products can be! They are full of tons of sugar and sketchy trans fats! I'd much rather eat something more homemade and wholesome. So when I got home from work yesterday, I whipped up these delicious Chocolate Chip Oat Bars and they totally hit the spot!
I ordered gluten free oat flour in bulk a while ago, but haven't gotten a chance to use some of it! I decided to use it in this recipe to make it gluten free and bulk up the fiber a bit! The bars were so cake-like and soft, they tasted just like the coffee cake at Starbucks!!
This recipe makes 16 long bars that I cut out in a 9x12 baking dish! Enjoy!
Cut into 16 bars, then enjoy!! These tasted so good as an afternoon snack, and as breakfast this morning too! Chocolate chips for breakfast? YES please!
Paleo Banana Bread Bars
This is my first time trying a paleo baking recipe. I've tried making a few grain free ones in the past, but they always included whey, which has been disagreeing with me lately. I decided to try this all paleo (except for a bit of stevia!) and it turned out incredible!!! I can say it's even better than typical baked goods!! I hope you all are able to try my paleo banana bread bars soon!
And there you have it!!! This is suchhhh a delicious recipe, you would never know that there was no wheat in it!! I am definitely going to be experimenting with more paleo baking soon!! :)
Banana Oatmeal Bake
My dad has been on an oatmeal kick lately. I made him a big, yummy bowl the other morning, but unfortunately don't have time to do that every day! I wish I did...but alas...I am a working girl now. So last night I decided to quickly whip up a baked oatmeal concoction that we could eat for the rest of the week without too much hassle. We tasted a bit of of it last night and it tasted wonderful! Just like warm oatmeal in a gooey baked form with the bananas oozing out. It was absolutely delicious. I definitely want to incorporate more oats into my daily life and figure out new and tasty ways to make baked oats recipes! Here is my very first one! :)
Banana Oatmeal Bake
I absolutely love using Pamela's gluten free baking products!! They are the best mix I have come across and never leave me disappointed with my baking results! I also love the GF oats from Trader Joe's because they come in a huge bag at a great price!
I cut mine into 9 squares, so for each square the nutrition facts are as follows: 115 calories, 3g fat, 19g carbs, 3.5g fiber, 5g protein.
You could have these squares anytime of day! I just paired up a square with a hard boiled egg before heading out for my workout! These would also taste great with some peanut butter on top...the possibilities are endless! And it's such an easy recipe to whip up. I hope you all get to try this recipe soon!

Peanut Butter Energy Balls
Every time I see or hear the word peanut butter, I am immediately interested in what is being talked about. I love peanut butter and pretty much eat it every day. I just feel the same about any nut butter! Almond, cashew, sunflower seed butter...it's all good! On Sunday, I decided to make some quick energy balls that I could have as my pre-workout meals all week. This may seem silly, but I always try to bake or make something yummy to eat before I workout as extra motivation to actually wake up early and workout before my day begins! I love the habit I have gotten into and it really helps me stay accountable to my morning workouts. These energy balls are high in protein and healthy fat and will keep you going for a while! They were very easy to whip up and so delicious! My fiancé pretty much wanted to eat the entire batch! :) here is my recipe!

Gingerbread Bars
Gingerbread is one of my all time favorite Christmas treats. Last year, I developed a recipe using a blend of gluten free flours, including almond flour. This year, I am planning on taking gingerbread to my work Christmas party. I found out my supervisor has an almond allergy, as well as one of my best friends who just figured out she has an almond allergy too! I wanted to make an almond-free version of the recipe to make sure it still tastes good. And it does! It tastes even better. Here is my new and improved gluten free Gingerbread recipe!
I checked mine with a fork (as you can see) but toothpicks work best! I am so excited to make another batch next week for our work Christmas party! I hope you all get to try this new and improved recipe this weekend!
