My Mega Monday Meal Prep!

In under 90 minutes, I prepared healthy and nourishing meal options for my family this week. Yes it took some time and planning, but meal planning and prepping have been essential to our sanity as a busy family!

⁣During Lily’s morning nap, I speed cooked and prepared so much for our week!

Here’s what we have on the menu this week: ⁣ ⁣

  • GF pancakes⁣

  • Homemade Granola

  • Cauliflower rice ⁣

  • Roasted vegetables ⁣

  • Zucchini stew

  • Turkey taco meat (prepped yesterday)

  • Chicken verde (prepped over the weekend) ⁣ ⁣

Meal prep doesn’t have to take an entire day. Just carve out 1-2 hours/week to prepare as much as you can and front load your week in regards to cooking. That way the rest of your week will go smoothly and you’ll have less to do and clean up during your busy week! ⁣ ⁣This has saved my life as a busy working mom of two, and I’m sure it will help you as well!⁣
