Homemade Peanut Butter Granola Bars

Fun story: I thought I was ordering a single container of old fashioned rolled oats from Amazon, so when a package of 6 containers showed up, I knew I’d have to start getting creative in the kitchen with some recipes! I’ve also been wanting to experiment with some homemade granola bar recipes for my girls to have quick and nutritious snacks at home, so I whipped these up with Emma and they ended up being so delicious! Here’s the recipe, hope you all enjoy!

Almond Butter Energy Balls

Lamajoun (Armenian meat pizza)

I have been craving one of my favorite childhood meals for FOREVER. But unfortunately, it is usually made on regular thin bread, so I haven’t been able to have it for a while due to my gluten allergy! My mom and I decided to make some homemade lamajoun (which we like to refer to as a meat pizza) on gluten free tortillas (I used the Mission brand) and man oh man did they turn out delicious!

These thin pizzas are great for meal prep, and are even great to make in bulk and freeze for later! I hope y’all enjoy some delicious Aremnian food and try out this recipe soon!

Place all the ingredients except for the meat in the food processor. Pulse until it is broken down and looks almost like a salsa!

In a medium bowl, mix the ground beef with the salsa-like mixture. Then gently pat a thin layer of the beef mix onto each tortilla.

Pumpkin Oat Muffins

These are hands-down the best pumpkin muffins I’ve made! And I’ve made a lot over the years as I’ve attempted to healthify some of my favorite baked goods! This recipe is easy my toddler even helped me, and it’s definitely a keeper for the Fall season and really any time of year! Enjoy!

Gluten-free Oatmeal Chocolate Chip Cookies

Ohhhhhh these cookies, y’all. I can’t even begin to explain how delicious they are. My husband even had the audacity to say they are the best cookies he’s had. And I can’t wait to share this recipe with you guys! Hope you all enjoy it as much as we did this weekend! (Yes they’re all gone!)
